Quail eggs with Shrimp and Cashew Nuts

One of the recipes that I always remember growing up in Manila is this simple yet tasty dish called Quail eggs with shrimp and cashew nuts.
One of our older cousins, Ate Celia, who was always tasked to cook every Holy Week during the family Pabasa in Sampaloc would cook this recipe. It was a very good no-meat alternative. This recipe was always a hit with the Pabasa penitents. It is light and filling. It has a good combination of "meat" from the sea, the shrimps, and the colorful combination of the green peas, carrots and Jicama or the singkamas as we call it in Filipino. The quail eggs give the recipe additional protein and a sense of "cuteness". Aside from the Jicama, the cashew nuts give the recipe that crunch as one bites into it.
I learned how to cook this recipe by watching Ate Celia cook this recipe during the Holy Week and my father at home. After cooking and "testing" this recipe, I realized that this recipe was very easy to make, and my family loves it!
Ingredients:
Butter (Salted) - 1/4 cup
White Onion - 1 pc.
Shrimp (deveined and shelled) - 10 - 15 pcs.
Green Peas and Carrots - 1 Cup
Jicama (Singkamas) - 1 pc.
Salt and Pepper
Corn Starch - 1 Tbsp + Water (1 Cup)
Cashew Nuts - 1 Cup
Quail Eggs (hard-boiled) - 18 pcs.
Note: This recipe is a "bagsakan" recipe which means ingredients will be thrown into the pan at very short intervals. All the ingredients will have to be prepared, peeled, chopped or sliced or diced, or thawed, before hand.
Preparation:
- Mince the onions
- Shell the shrimps
- Boil and peel the quail eggs
- Thaw green peas and carrots
- Peel and dice jicama/singkamas
- Set aside the corn starch and water. These will be added later in the cooking.
Let's cook!
- Heat pan.
- Melt butter.
- Throw in the onions. Cook until soft.
- Add the shrimps. Cook until orange on both sides.
- Throw in the green peas and carrots.
- Add in the jicama.
- Add salt and pepper to taste.
- Mix corn starch and water. Add to the pan. Stir so that the corn starch will cook evenly.
- Add the cashew. Stir.
- Add the quail eggs. I add the quail eggs last to avoid the eggs being squashed when I stir the dish.
Prepare to serve! Enjoy!
